Our Story

A Legacy of Flavor and Family

“The Original” Lindo Michoacán D.I. first opened its doors on January 6, 1990. It began with one dining room seating just 12 tables. Today, it has grown into a three-dining-room restaurant with space for over 300 guests and has expanded to multiple locations, including Il Toro E La Capra, an Italian and Mexican fusion restaurant.

Javier Barajas, the proud owner of Lindo Michoacán, first learned to cook when his grandparents, Timoteo and Ninfa, sent him to study at a seminary in Michoacán. There, a wooden revolving service door (the torno) separated the nuns in the kitchen from the priests and students in the dining hall. Through a small crack in the door, Javier formed a friendship with Mother Superior. Soon, Sister Anita invited him to the kitchen to help move heavy pots and pans. She quickly noticed his eagerness to learn and began teaching him the art of food preparation. Over the years, Javier mastered the secrets of Michoacán cuisine.

I took my boss and coworker to The Original Lindo Michoacan, and it did not disappoint. The atmosphere was absolutely amazing—warm, welcoming, and full of charm. The food was delicious, bursting with authentic flavor, and beautifully presented. Everyone at our table was thoroughly pleased. The place was beautifully decorated and clean, the hostesses and servers were all very attentive, and the food was good! My husband had the carnitas, which were tender, and I had the mole chicken. The sauce was delicious! I enjoyed it a lot, even though the chicken was a little bit tough, but not too bad. The guacamole made fresh right in front of us was amazing, and they served us soup before dinner. We were so full we got our dessert to go. That was delicious, too!

Have been coming here for years and years and you know why? Because Lindo is crazy good! For me and I know so many others, this is one of the best Mexican restaurants in Las Vegas. Everyone l've met here has always been so friendly and accommodating. Being bigger men we tend to require a large table rather than a booth, they always make sure we're comfortable. A few pitchers of their house margaritas make the experience tops.

We stopped in for a late dinner and were impressed with the delicious food options. We even had some Tres leches cake and cafe de olla. The tableside guacamole was also very fresh 👌

This was a great place to eat while in vegas and provided a great experience. I had a chimichanga, enchilada, and beef tacos, and they were all great. They also made the guacamole fresh at the table, and it was unbelievably good. The horchata was only ok, but I was able to look past that and rate this establishment five stars.

New to the area and by far my favorite Mexican restaurant in Las Vegas. Big dinner portions . Steak and lobster is worth the price. Delicious margaritas. Casual atmosphere. Great views. Hostess can work on smiling more. Lost a star because our waitress spilled a tequila drink on my husbands lap.

Friendly service. Family friendly restaurant. Lively atmosphere. Good happy hour pricing. We came on NYE and they were very busy, but sat us right away. They had multiple servers helping our table, which was great. The servers were all friendly and helpful. The food was good. The highlight is the restaurant decor and the servers.

Since childhood, Stephanie Barajas—Javier’s daughter—dreamed of working at the restaurant. At the age of 9, she wrote a letter asking guests to share feedback about the cleanliness of the restrooms, so they’d want to return—and so one day, she could work there too. That letter still hangs in the women’s restroom today.

At 16, she began working alongside her father at “The Original” Lindo Michoacán on weekends and school-free days. She later attended culinary school and learned every family recipe from her father and grandmother, Mama Chelo along with her twin Javier Jr. Today, Stephanie is the head of “The Original” Lindo Michoacán, ensuring every detail is maintained to preserve the authentic flavors of Mexican cuisine and the warm, traditional service that has defined the restaurant for over 35 years.

Javier “Javy” Crescencio Barajas Jr.

He was more than a beloved brother—he was the heart of every room, greeting everyone with a hug and lighting up the kitchen with laughter. From his early days at Lindo Michoacán cleaning silver to graduating from Le Cordon Bleu and mastering salsas alongside his twin sister Stephanie under Mama Chelo’s guidance, Javy’s love for food was unmatched. He had a deep passion for inventing

new recipes, loved rock and roll, and adored his two sons, Jason and Vinny, above all. Javy also had a fascination with space, always gazing at the stars with wonder. Despite his struggles, Javy was a light to those who knew him, and we know he’d look at all we’ve built and say, simply, “It’s beautiful.”

To honor Javy’s culinary spirit, his twin sister Stephanie created Javy’s Sundae—a dessert born from their shared dream of making everything from scratch. With homemade chocolate and strawberry snow, caramel, whipped cream, fresh vanilla bean and cinnamon ice cream and hand-crafted sprinkles, with a swirl churro base inspired by the Disneyland churros Javy made every day for Stephanie when they would come in to make salsas, every bite is a tribute to him. This dessert also inspired Stephanie to make sure Javy’s dream came true, now making everything from scratch with passion and love.

Celeste Barajas, the eldest daughter of Javier Barajas, now manages all the administrative details at Lindo Michoacán. Although she once pursued med school, destiny led her back to the family restaurant—a place that has been her home since she was five, following her dad to work after school.

Known fondly as the “Lindo Michoacán lawyer” by her dad and sister Steph for her fierce dedication to protecting her family, Celeste may not be a chef, but as a super taster, she savors every bite and every moment. For Celeste, family is everything, and that deep bond continues to inspire her every day.
